Ingredients
  

Salad

  • 1 lb boneless, skinless chicken breasts
  • 6 cups Romaine lettuce washed and dried
  • 1 cup fresh strawberries sliced
  • 0.5 cup goat cheese crumbled
  • 0.25 cup toasted almonds

Honey Lime Dressing

  • 0.25 cup olive oil
  • 2 tbsp lime juice
  • 2 tbsp honey
  • 1 tbsp Greek yogurt
  • 1 tsp Dijon mustard

Instructions
 

Prepare the Chicken

  • Marinate chicken breasts in a mixture of mashed strawberries and a splash of lime juice for 30 minutes (optional for extra flavor).
  • Bake, grill, or pan-sear the chicken until the internal temperature reaches 165°F (74°C), about 15 minutes. Let it rest, then slice or dice.

Make the Dressing

  • Whisk together olive oil, lime juice, honey, Greek yogurt, and Dijon mustard in a bowl until smooth. Adjust sweetness or tanginess to taste.

Assemble the Salad

  • Place Romaine lettuce in a large bowl or on a platter.
  • Arrange sliced chicken, strawberries, crumbled goat cheese, and toasted almonds on top of the greens.
  • Drizzle the honey lime dressing over the salad just before serving.

Notes

  • Keep dressing separate until serving to prevent soggy greens.
  • Store leftovers in an airtight container for up to 2-3 days.
  • Experiment with spinach or mixed greens for a different flavor.
