Ingredients
  

Potatoes

  • 4 large russet potatoes
  • 2 tbsp olive oil for rubbing potatoes
  • 1 tsp salt for rubbing potatoes

Steak Bites

  • 1 lb sirloin or ribeye steak cut into bite-sized pieces
  • 2 tbsp olive oil for cooking steak
  • 1 tsp steak seasoning
  • 1 tsp garlic powder

Toppings

  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • 0.25 cup green onions chopped
  • 0.25 cup crispy fried onions optional

Instructions
 

Bake the Potatoes

  • Preheat oven to 400°F (200°C).
  • Wash russet potatoes, poke with a fork, rub with olive oil and salt, and place directly on oven rack.
  • Bake for about 60 minutes or until easily pierced with a fork.

Prepare Steak Bites

  • While potatoes bake, chop steak into bite-sized pieces and season with steak seasoning and garlic powder.
  • Heat olive oil in a skillet over medium-high heat and sear steak bites for 3-5 minutes, flipping until browned and cooked to desired doneness.

Assemble Potatoes

  • Let potatoes cool slightly, then cut open and fluff the insides with a fork.
  • Top potatoes with steak bites, shredded cheddar cheese, sour cream, green onions, and crispy fried onions if using.
  • Serve immediately with additional toppings as desired.

Notes

  • Choose large russet potatoes for best texture.
  • Poking holes in potatoes prevents bursting.
  • Store leftovers separately to maintain texture.
