Ingredients
  

Soup

  • 2-3 fresh jalapeños adjust based on spice preference, seeds removed for less heat
  • 8 oz cream cheese
  • 1-2 cups shredded cheddar cheese
  • 4-6 cups chicken broth or vegetable broth for vegetarian option
  • 1 onion chopped
  • 2 cloves garlic minced

Grilled Cheese Dippers

  • 8 slices sourdough bread or thick-cut white bread
  • 4-8 slices cheddar cheese or mix of cheddar and mozzarella
  • 4 tbsp butter for grilling

Instructions
 

Prepare the Soup

  • Heat a large pot over medium heat with a bit of butter or olive oil. Add chopped onions and sauté until soft, about 5 minutes.
  • Add minced garlic and chopped jalapeños, cooking for another minute until fragrant.
  • Pour in the broth and add cream cheese. Stir and simmer for 15 minutes.
  • Blend the soup until smooth using an immersion blender or regular blender. Adjust seasoning with salt and pepper.

Make the Grilled Cheese Dippers

  • Butter one side of each bread slice. Place cheese between two slices, butter-side out.
  • Heat a skillet over medium heat. Grill sandwiches until golden brown and cheese is melted, about 3-4 minutes per side. Cut into strips.

Notes

  • 1- Adjust jalapeño seeds for desired spice level.
  • 2- Use low-sodium broth to control saltiness.
  • 3- Serve warm with dippers for best experience.
