  • 2 lbs chicken thighs boneless, skinless

Pineapple Juice For Sweetness

  • 1 cup pineapple juice canned or fresh
  • 1 cup pineapple chunks optional, fresh, frozen, or canned

Soy Sauce For Umami Flavor

  • 0.5 cup soy sauce regular or low-sodium
  • 0.25 cup brown sugar
  • 0.25 cup ketchup
  • 1 medium onion chopped
  • 2 cloves garlic minced

  • Chop the onion, mince the garlic, and measure out all sauces and spices.

Creating The Flavorful Sauce

  • In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, and spices. Adjust seasonings to taste.

Layering Ingredients In The Cooker

  • Place chicken thighs in the slow cooker, pour sauce over the chicken, and add chopped onion and garlic on top.

Cooking and Shredding

  • Cook on low for 6-8 hours or high for 4-6 hours until chicken reaches 165°F. Remove chicken, shred with two forks, and return to the slow cooker to soak up sauce.
