A hearty and flavorful beef curry made with tender beef, rich spices, and vegetables, slow-cooked to perfection.

Ingredients
  

  • 2 lbs chuck roast cut into 1-inch cubes
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 1 can diced tomatoes 14.5 oz
  • 1 can coconut milk 13.5 oz
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tbsp tomato paste
  • salt and pepper to taste

Instructions
 

  • Cut the beef into 1-inch cubes and season generously with salt and pepper.
  • Optional: Heat oil in a pan and brown the beef on all sides in batches, then transfer to the slow cooker.
  • Place the beef at the bottom of the slow cooker.
  • Add chopped onions, minced garlic, and grated ginger on top of the beef.
  • Sprinkle curry powder, turmeric, and cumin over the ingredients.
  • Pour in diced tomatoes, tomato paste, and coconut milk, then stir to combine.
  • Cover and cook on low for 8-10 hours or on high for 5-6 hours, until the beef is tender.
  • Stir the curry and adjust seasoning with salt and pepper as needed before serving.

Notes

  • 1- Use cold ingredients for flakier biscuits.
  • 2- Taste the apple filling and adjust spices as needed.
  • 3- Serve warm with ice cream or whipped cream for an extra treat.
