Ingredients
  

Cake

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 2 eggs
  • 0.5 cup butter softened
  • 1 cup buttermilk
  • 2 cups fresh rhubarb chopped into 1/2 inch pieces
  • 1 tsp vanilla extract optional

Butter Sauce

  • 0.5 cup butter
  • 1 cup sugar
  • 0.5 cup heavy cream

Instructions
 

Prepare the Cake

  • Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan, or line the bottom with parchment paper.
  • In a large bowl, cream together softened butter and sugar until light and fluffy, about 2-3 minutes.
  • Beat in eggs one at a time, then add vanilla extract if using.
  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually add dry ingredients to the wet mixture, alternating with buttermilk, mixing until just combined.
  • Gently fold in chopped rhubarb.
  • Pour batter into the prepared pan and spread evenly.
  • Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.

Make the Butter Sauce

  • In a saucepan over medium heat, melt butter.
  • Stir in sugar until fully dissolved.
  • Slowly add heavy cream, stirring constantly, and bring to a gentle simmer.
  • Cook for 2-3 minutes, stirring occasionally, until slightly thickened. Remove from heat.

Serve

  • Slice the cake and drizzle warm butter sauce over each piece, or serve sauce on the side.

Notes

  • Store leftover cake in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.
  • Store butter sauce separately in the refrigerator and reheat gently before serving.
  • Adjust sugar in cake or sauce to taste for desired sweetness or tartness.
