Refreshing Rhubarb Lemonade

Ingredients
  

Rhubarb

  • 4 cups fresh rhubarb, chopped Use firm, crisp stalks; red stalks for sweeter flavor and pink hue

Citrus

  • 1 cup lemon juice Freshly squeezed for best flavor
  • 0.5 cup orange juice Optional, for added sweetness

Sweetener and Water

  • 1 cup sugar Adjust to taste; can substitute with honey or agave
  • 4 cups water Filtered water recommended; use sparkling water for fizzy version

Instructions
 

Prepare Rhubarb

  • Wash rhubarb stalks, trim off leaves, and chop into 1/2-inch pieces.

Juice Citrus

  • Roll lemons and oranges on counter, cut in half, juice, and strain to remove seeds.

Mix Ingredients

  • In a saucepan, combine chopped rhubarb, lemon juice, orange juice, sugar, and water. Bring to a boil, then simmer for 20 minutes, stirring occasionally.
  • Once rhubarb is tender, remove from heat, mash mixture, and let cool slightly.
  • Strain through a fine-mesh sieve to create concentrate. Mix concentrate with water (3:1 ratio) to taste.

Notes

  • Store concentrate in an airtight container in the fridge for up to two weeks.
  • Freeze concentrate in ice cube trays for longer storage.
  • Add mint or strawberries for a flavor twist.
