Raspberry Cream Cheese Bites are a delightful dessert combining the tartness of fresh raspberries with creamy cream cheese in a flaky puff pastry crust. Perfect for parties or a sweet snack, these bite-sized treats are easy to make and visually stunning.

Ingredients
  

  • 8 oz cream cheese softened
  • 1 cup fresh raspberries
  • 1/4 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 package puff pastry thawed
  • flour for dusting

Instructions
 

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Unfold puff pastry on a lightly floured surface and cut into circles or squares.
  • In a bowl, mix softened cream cheese, sugar, egg, and vanilla extract until smooth.
  • Spoon a small amount of cream cheese mixture onto each pastry piece and top with a few raspberries.
  • Bake for 12-15 minutes until pastry is golden brown and filling is set.
  • Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

  • Store in an airtight container in the fridge for up to 5 days.
  • Freeze for up to 3 months; thaw in the fridge overnight.
  • Try blueberries or strawberries for different flavors.
