Ingredients
  

Dry Ingredients

  • 2 cups old-fashioned rolled oats
  • 0.5 cup brown sugar
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 1 tbsp pumpkin pie spice

Wet Ingredients

  • 1 cup pumpkin puree strained to remove excess water
  • 1.5 cups milk or non-dairy alternative
  • 2 eggs
  • 0.25 cup melted butter or oil
  • 1 tsp vanilla extract

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C) and grease an 8x8 inch baking dish.

Mixing

  • In a large bowl, combine oats, brown sugar, baking powder, salt, and pumpkin pie spice.
  • In a separate bowl, whisk together pumpkin puree, milk, eggs, melted butter, and vanilla extract.
  • Pour wet ingredients into dry ingredients and stir until just combined.

Baking

  • Pour batter into prepared baking dish and spread evenly.
  • Bake for 30-40 minutes until golden brown and a toothpick inserted comes out clean.

Notes

  • 1- Use cold ingredients for flakier texture.
  • 2- Adjust spices in the mix as needed.
  • 3- Serve warm with maple syrup or yogurt for an extra treat.
