Ingredients
  

  • 1 cup granulated sugar
  • 1 cup brown sugar light or dark, depending on preference
  • 0.5 cup heavy cream
  • 2 tablespoons butter salted or unsalted with a pinch of salt
  • 1 teaspoon vanilla extract
  • 1.5 cups pecans toasted, halves or pieces

Instructions
 

  • Combine granulated sugar, brown sugar, heavy cream, and butter in a heavy-bottomed saucepan over medium heat.
  • Stir constantly until the sugar is fully dissolved, then bring the mixture to a boil.
  • Reduce heat and cook until the mixture reaches the soft-ball stage (235-240°F on a candy thermometer).
  • Remove from heat, stir in vanilla extract and pecans quickly.
  • Drop spoonfuls of the mixture onto parchment paper and let cool until set.

Notes

  • 1- Use fresh, high-quality pecans and toast them for enhanced flavor.
  • 2- Be patient with the cooking process to avoid grainy or sticky pralines.
  • 3- Store in an airtight container at room temperature for up to two weeks.
