Ingredients
  

  • 2 cups fresh mint leaves stems removed
  • 1 cup cilantro leaves stems removed
  • 1 teaspoon ginger chopped
  • 2 cloves garlic
  • 1 green chili adjust for spiciness
  • 2 tablespoons cashews for creaminess
  • 1 teaspoon salt to taste
  • 1 teaspoon sugar to balance flavors
  • 2 tablespoons lemon juice freshly squeezed
  • 2-4 tablespoons ice-cold water adjust for consistency

Instructions
 

  • Wash the mint and cilantro leaves thoroughly under cold water in a colander to remove any dirt. Shake off excess water.
  • In a blender or food processor, combine mint leaves, cilantro leaves, ginger, garlic, green chili, cashews, salt, sugar, and lemon juice.
  • Add 2 tablespoons of ice-cold water and blend until smooth. Add more water, one tablespoon at a time, if needed to reach desired consistency.
  • Taste and adjust seasoning, adding more salt, sugar, or lemon juice as needed.
  • Transfer to an airtight container and refrigerate or serve immediately.

Notes

  • Use fresh mint leaves for the best flavor.
  • Adjust spiciness by varying the amount of green chilies.
  • Store in an airtight container to keep fresh longer.
