Ingredients

  • 1 cup butter softened
  • 1 cup sugar
  • 1 egg
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp kosher salt

Flavor Components

  • 0.5 tsp peppermint extract adjust to taste
  • 2 drops green food coloring optional
  • 1 cup dark chocolate chips half mixed, half chopped

Instructions
 

Prepare the Dough

  • Cream together butter and sugar until fluffy.
  • Beat in egg and peppermint extract, adding green food coloring if desired.
  • Gradually add dry ingredients (flour, baking powder, baking soda, salt) until just combined, being careful not to overmix.
  • Fold in chocolate chips.

Chill the Dough

  • Wrap dough tightly in plastic wrap and chill in the refrigerator for at least 1 hour, preferably overnight.

Bake the Cookies

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Scoop rounded tablespoons of dough onto the baking sheet, leaving space between each cookie.
  • Bake for 8-10 minutes, until edges are golden but centers are slightly soft.
  • Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

  • Use real peppermint extract for authentic flavor.
  • Chill dough for at least an hour for best texture.
