Ingredients
  

Shortbread Crust

  • 1.5 cups all-purpose flour
  • 0.5 cup powdered sugar
  • 0.75 cup cold butter cut into small pieces
  • 0.25 tsp salt

Lemon Filling

  • 4 eggs
  • 1.5 cups granulated sugar
  • 0.5 cup lemon juice freshly squeezed
  • 2 tbsp lemon zest
  • 0.25 cup all-purpose flour
  • 1 tsp baking powder

Instructions
 

Prepare the Crust

  • Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
  • Combine flour, powdered sugar, and salt in a bowl. Cut in cold butter until mixture resembles coarse crumbs.
  • Press mixture evenly into the bottom of the prepared pan. Bake for 20 minutes or until lightly golden.

Make the Filling

  • While crust bakes, whisk together eggs, granulated sugar, lemon juice, lemon zest, flour, and baking powder until smooth.
  • Pour lemon filling over the baked crust. Return to oven and bake for 25-30 minutes, until filling is set.
  • Let bars cool completely in the pan before cutting into squares.

Notes

  • 1- Use cold ingredients for flakier biscuits.
  • 2- Taste the apple filling and adjust spices as needed.
  • 3- Serve warm with ice cream or whipped cream for an extra treat.
