Ingredients
  

Jalapeno Filling

  • 2 jalapenos firm, smooth, roasted
  • 4 oz cream cheese softened
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder

Sandwich

  • 4 slices sourdough bread
  • 1 cup cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded
  • 4 slices bacon cooked crispy, crumbled
  • 2 tbsp butter softened

Instructions
 

Prepare Jalapeno Filling

  • Preheat oven to 400°F (200°C). Toss jalapenos with olive oil, roast for 15-20 minutes until blistered. Cool, peel, and remove seeds.
  • Mix softened cream cheese with garlic powder, onion powder, salt, and pepper until smooth.
  • Slice roasted jalapenos lengthwise, stuff with cream cheese mixture.

Assemble and Cook Sandwich

  • Butter one side of each bread slice. On the unbuttered side, layer cheddar, Monterey Jack, stuffed jalapenos, and crumbled bacon.
  • Heat a skillet over medium-low heat. Place sandwich in skillet, cook 3-4 minutes per side until golden and cheese is melted.

Notes

  • Use milder jalapenos for less heat.
  • Experiment with cheese blends like pepper jack.
  • Serve with ranch or tomato soup.
