Ingredients
  

Tender Chicken Breasts

  • 4 boneless, skinless chicken breasts trimmed of excess fat

Sweet Pineapple Slices

  • 8 slices fresh pineapple do not drain juice

Flavorful BBQ Sauce

  • 1 cup BBQ sauce tangy and slightly sweet, gluten-free if needed

Additional Veggies

  • 1 red bell pepper sliced
  • 1 zucchini sliced
  • 2 green onions chopped

Gathering Your Ingredients

  • Prepare all ingredients: trim chicken, slice pineapple, chop veggies, and gather BBQ sauce and foil sheets.

Layering The Chicken And Veggies

  • Lay out foil sheets, spray with non-stick cooking spray, place a chicken breast in the center, top with 2 pineapple slices, add veggies, and drizzle with BBQ sauce.

Sealing The Foil Packets

  • Fold the foil over the ingredients, seal the long sides by folding together, then crimp the short sides to create a tight packet.

Cooking

  • Grill at 350-450°F for 20-25 minutes, bake at 400°F for 20 minutes, or cook over a campfire for 20-25 minutes, until chicken reaches 165°F internally.

Notes

  • 1- Use cold ingredients for flakier biscuits.
  • 2- Taste the apple filling and adjust spices as needed.
  • 3- Serve warm with ice cream or whipped cream for an extra treat.
