Ingredients
  

Juicy Grilled Chicken

  • 1 lb boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil for marinade
  • 1 tbsp lemon juice for marinade
  • 2 cloves garlic minced, for marinade

Fresh Broccoli

  • 4 cups broccoli florets
  • 1 tbsp olive oil for tossing

Creamy Garlic Sauce

  • 0.5 cup mayonnaise
  • 0.5 cup sour cream
  • 3 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard

Flavorful Grains

  • 2 cups cooked rice or quinoa, couscous, or farro

Optional Toppings

  • 0.25 cup toasted almonds or cashews, sesame seeds, or fried onions

Instructions
 

Marinate the Chicken

  • In a bowl, mix olive oil, lemon juice, minced garlic, and herbs. Add chicken and marinate for at least 15 minutes (or overnight).

Prepare the Broccoli

  • Toss broccoli florets with olive oil, salt, and pepper. Steam, roast, or grill until crisp-tender, about 5-7 minutes.

Grill the Chicken

  • Preheat grill to medium-high heat. Grill chicken for 5-7 minutes per side until cooked through. Let rest for 5-10 minutes, then slice.

Make the Creamy Garlic Sauce

  • Whisk together mayonnaise, sour cream, minced garlic, lemon juice, Dijon mustard, salt, and pepper until smooth. Adjust seasoning to taste.

Assemble the Bowls

  • Layer cooked grains in bowls, top with sliced chicken and broccoli, drizzle with garlic sauce, and garnish with optional toppings.
