Ingredients
  

Essential Dry Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp granulated sugar
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg

Key Wet Ingredients

  • 3/4 cup milk whole milk preferred, but skim or almond milk works too
  • 2 eggs
  • 1 tsp vanilla extract

Frying Essentials

  • 2-3 inches vegetable oil for frying, canola oil works too
  • powdered sugar for dusting

Instructions
 

Preparing the Batter

  • In one bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg until well combined.
  • In another bowl, whisk the milk, eggs, and vanilla extract until the eggs are well beaten.
  • Slowly pour the wet ingredients into the dry ingredients, mixing until just combined. Do not overmix; a few lumps are okay. Adjust with milk or flour if needed to reach a smooth, pourable consistency.

Frying to Perfection

  • Heat 2-3 inches of vegetable oil in a heavy-bottomed pot or deep fryer to 375°F (190°C), using a candy thermometer to monitor the temperature.
  • Carefully drop spoonfuls of batter into the hot oil using a small cookie scoop, frying in batches of 4-5 to avoid overcrowding. Fry for 1-2 minutes per side until golden brown and crispy.
  • Remove the funnel cake bites with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

Dusting with Powdered Sugar

  • While the funnel cake bites are still warm, generously dust them with powdered sugar using a sifter or small strainer for even coverage.

Notes

  • 1- Use cold ingredients for flakier biscuits.
