Ingredients
  

Cookie Base

  • 1/2 cup butter
  • 2 cups sugar
  • 1/2 cup cocoa powder
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 3 cups quick oats
  • 1/2 cup shredded coconut

Mint Frosting

  • 1/2 cup butter softened
  • 3 cups powdered sugar
  • 2-3 tbsp milk or cream
  • 1/2 tsp peppermint extract
  • 1-2 drops green food coloring optional

Chocolate Ganache

  • 1 cup dark chocolate chips 60-70% cacao
  • 1/2 cup heavy cream

Instructions
 

Prepare the Cookie Base

  • Line a cookie sheet with wax paper. In a saucepan, combine butter, sugar, cocoa, and milk. Bring to a boil over medium heat, stirring frequently. Boil for 1-2 minutes.
  • Stir in vanilla and salt, then add oats and coconut. Mix until well combined. Drop spoonfuls of the mixture onto the wax paper and refrigerate until set, about 30 minutes.

Make the Mint Frosting

  • Beat powdered sugar, butter, milk, and peppermint extract until smooth and creamy. Adjust consistency with more milk or powdered sugar if needed. Add green food coloring if desired. Spread frosting over chilled cookie bases.

Craft the Chocolate Ganache

  • In a microwave-safe bowl, combine chocolate chips and heavy cream. Microwave in 30-second intervals, stirring in between, until smooth. Spoon ganache over frosted cookies, letting it drip down the sides. Refrigerate until set, about 30 minutes.

Notes

  • Ensure the cookie base boils for only 1-2 minutes to avoid dry cookies.
  • Adjust peppermint extract to taste for desired mint intensity.
  • Store cookies in an airtight container in the refrigerator for up to a week.
