Feta Spring Flatbreads are a delightful way to celebrate the flavors of spring with fresh mint, spinach, and creamy feta on a simple two-ingredient dough. Perfect as a quick snack or side dish.

Ingredients
  

Dough

  • 1 cup self-raising flour
  • 1 cup Greek yogurt

Filling

  • 1 cup feta cheese crumbled
  • 2 tablespoons fresh mint finely chopped
  • 1 cup spinach wilted and drained
  • 2 cloves garlic minced
  • 2 tablespoons cream cheese optional, for extra creaminess
  • black pepper to taste

Instructions
 

Prepare the Dough

  • In a bowl, mix self-raising flour and Greek yogurt until a soft dough forms.
  • Knead lightly on a floured surface, then divide into 4 equal portions.

Prepare the Filling

  • In a separate bowl, combine crumbled feta, chopped mint, wilted spinach, minced garlic, cream cheese (if using), and black pepper. Mix well.

Shape and Fill Flatbreads

  • Roll each dough portion into a thin circle. Place a spoonful of filling in the center, fold edges over to seal, and press lightly to flatten.

Cook Flatbreads

  • Heat a heavy-bottomed pan over medium-high heat. Add a little oil if desired.
  • Cook each flatbread for 3-5 minutes per side until golden brown and slightly charred.

Notes

  • 1- Use fresh mint for the best flavor, though dried can work in a pinch.
  • 2- Ensure spinach is well-drained to avoid a soggy filling.
  • 3- Serve warm with a dip like yogurt-cucumber or olive oil for extra flavor.
