Ingredients

  • 2 large English cucumbers firm, with smooth, dark green skin
  • 4 lemons freshly squeezed, choose heavy ones for more juice
  • 1/2 cup honey or other natural sweetener like agave or sugar, adjust to taste
  • 4 cups water cold, for dilution
  • ice for serving
  • mint sprigs optional, for garnish

Instructions

Prepare Cucumber Juice

  • Wash cucumbers thoroughly. Slice into 1-inch chunks. Blend in a blender or food processor until smooth. Strain through a fine-mesh sieve or cheesecloth, pressing solids to extract juice.

Mix Ingredients

  • In a pitcher, combine cucumber juice, freshly squeezed lemon juice (about 1 cup from 4 lemons), and honey. Add 4 cups cold water. Stir until honey is fully dissolved. Adjust sweetness or tartness to taste.

Chill and Serve

  • Chill the mixture in the refrigerator for at least 30 minutes. Serve over ice, garnished with cucumber slices, lemon wedges, or mint sprigs.

Notes

  • Use fresh cucumbers and lemons for the best flavor.
  • Adjust sweetness by tasting as you go.
  • Optional: Add fresh herbs like mint or basil for extra flavor.
  • Store in an airtight container in the refrigerator for up to 3-4 days.
