Ingredients
  

  • 1 cup cornmeal Fine or coarse-ground, depending on desired texture
  • 2 large eggs
  • 1 can (15 oz) creamed corn
  • 1 can (15 oz) whole kernel corn Drained
  • 1 cup sour cream Can substitute with Greek yogurt
  • 0.5 cup melted butter
  • 1 cup milk Whole milk preferred
  • 1 cup shredded cheddar cheese Optional, for cheesy variation
  • 1 tsp salt Adjust to taste
  • 0.5 tsp black pepper Adjust to taste
  • 1 tbsp sugar Optional, for sweeter version

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • In a large bowl, combine cornmeal, eggs, creamed corn, whole kernel corn, sour cream, melted butter, milk, salt, pepper, and sugar (if using). Stir until just combined.
  • Pour half of the mixture into the prepared baking dish. Sprinkle half of the shredded cheddar cheese over it (if using).
  • Pour the remaining mixture on top and sprinkle with the rest of the cheese.
  • Bake for 45-55 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  • Let the casserole rest for 5-10 minutes before serving.

Notes

  • 1- Use cold ingredients for a creamier texture.
  • 2- Adjust seasonings to taste before baking.
  • 3- Serve warm with your favorite main dish for a comforting meal.
