Ingredients
  

Cilantro Lime Marinade

  • 0.25 cup lime juice
  • 1 tablespoon lime zest
  • 2 tablespoons olive oil
  • 0.25 cup fresh cilantro chopped
  • 1 tablespoon honey

Chicken

  • 4 chicken breasts

Strawberry Salsa

  • 1 cup strawberries diced
  • 0.5 jalapeño finely diced, seeds removed
  • 0.25 cup red onion finely diced
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro chopped

Instructions
 

Marinate the Chicken

  • In a bowl, combine lime juice, lime zest, olive oil, chopped cilantro, and honey to make the marinade.
  • Place chicken breasts in a resealable bag or shallow dish, pour the marinade over them, and refrigerate for at least 30 minutes, up to 4 hours.

Prepare the Strawberry Salsa

  • In a bowl, mix diced strawberries, jalapeño, red onion, lime juice, and chopped cilantro. Adjust seasoning to taste and set aside.

Grill the Chicken

  • Preheat grill to medium-high heat and lightly oil the grates.
  • Remove chicken from marinade and grill for 3-4 minutes per side, until internal temperature reaches 165°F (74°C).

Serve

  • Top grilled chicken with strawberry salsa and serve immediately.

Notes

  • 1- Use ripe strawberries for the best salsa taste.
  • 2- Marinate chicken for at least 30 minutes to enhance flavor.
  • 3- Serve with refreshing sides like a salad or rice.
