Ingredients
  

Chocolate Crust

  • 1.5 cups flour
  • 0.25 cup cocoa powder regular or dark
  • 2 tbsp sugar
  • 0.5 tsp salt
  • 0.5 cup cold butter cubed
  • 2 tbsp vegetable oil
  • 4 tbsp ice water

Cherry Filling

  • 4 cups cherries fresh or frozen, pitted
  • 0.75 cup sugar
  • 1 tbsp lemon juice
  • 3 tbsp tapioca starch or cornstarch
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 1 tsp almond extract optional
  • 0.25 tsp cinnamon optional

Instructions
 

Prepare the Chocolate Crust

  • Combine flour, cocoa powder, sugar, and salt in a large bowl.
  • Cut in cold butter and vegetable oil until mixture resembles coarse crumbs.
  • Add ice water, 1 tbsp at a time, until dough comes together.
  • Form dough into a disc, wrap, and chill for 30 minutes.
  • Roll out dough on a floured surface and transfer to a 9-inch pie dish.

Make the Cherry Filling

  • In a large bowl, mix cherries, sugar, lemon juice, tapioca starch, vanilla extract, salt, almond extract, and cinnamon.
  • Let the mixture sit for 10 minutes to release juices.

Assemble and Bake

  • Preheat oven to 375°F (190°C).
  • Pour cherry filling into the prepared crust.
  • Cover with a lattice top or full dough sheet, cutting slits for steam.
  • Brush top with egg wash.
  • Bake for 40-45 minutes until crust is golden and filling is bubbly.
  • Cool completely before slicing.

Notes

  • Use cold butter for a flaky crust.
  • Ensure filling is bubbly to activate starch.
  • Let pie cool fully to set properly.
