Chicken Spinach and Mushroom

Ingredients
  

  • 1 lb boneless, skinless chicken breasts or chicken thighs
  • 8 oz fresh spinach washed thoroughly
  • 8 oz cremini mushrooms sliced, or button mushrooms
  • 1 cup heavy cream or crème fraîche
  • 1 tbsp cream cheese optional for extra creaminess
  • salt to taste
  • pepper to taste
  • 1 tsp garlic minced
  • 1 tsp fresh thyme or 1/2 tsp dried
  • 1 splash white wine optional for deglazing

Instructions
 

  • Prep all ingredients: chop vegetables, measure seasonings, and have everything ready.
  • Heat a large pan over medium-high heat. Season chicken with salt and pepper, then sauté until golden-brown and cooked through (internal temperature 165°F), about 5-7 minutes per side. Remove and set aside.
  • In the same pan, sauté mushrooms until browned, about 5 minutes. Add spinach and cook until wilted, about 2-3 minutes.
  • Add a splash of white wine to deglaze the pan, scraping up browned bits. Stir in heavy cream and cream cheese (if using), cooking until the sauce thickens, about 3-5 minutes.
  • Return chicken to the pan, add garlic and thyme, and simmer for 5 minutes to meld flavors.
  • Adjust seasoning to taste and serve hot.

Notes

  • 1- Use cold ingredients for a richer sauce.
  • 2- Taste and adjust seasoning as needed.
  • 3- Serve warm with rice, pasta, or a side salad for a complete meal.
