Ingredients

  • 2 cups mashed potatoes chilled, smooth and creamy
  • 3 eggs beaten
  • 1 cup shredded cheddar cheese plus extra for topping
  • 1/4 cup chopped chives
  • 1/4 cup cooked bacon bits
  • salt to taste
  • pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C) and grease a mini muffin tin well.
  • In a large bowl, combine mashed potatoes, beaten eggs, shredded cheese, chopped chives, bacon bits, salt, and pepper. Mix until smooth and well-combined.
  • Spoon the mixture into the prepared muffin tin, filling each cup about three-quarters full. Top each puff with a little extra cheese.
  • Bake for 15-20 minutes, or until the puffs are puffed up, golden brown, and set.
  • Let them cool in the tin for a few minutes before gently removing them with a butter knife or offset spatula. Serve warm.

Notes

  • 1- Use room temperature mashed potatoes for the crispiest puffs.
  • 2- Grease the muffin tin well to prevent sticking.
  • 3- Serve warm with dipping sauces like ranch or sour cream for an extra treat.
