Carne Guisada with Flour Tortillas

Ingredients
  

Carne Guisada

  • 2 lbs beef chuck cut into 1-inch cubes
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup tomato sauce
  • 2 cups beef broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano

Flour Tortillas

  • 2 cups all-purpose flour
  • 1/4 cup shortening or lard
  • 1 tsp salt
  • 3/4 cup warm water

  • Heat oil in a large pot over medium-high heat. Sear beef cubes in batches until browned, then set aside.
  • In the same pot, sauté onions until softened, then add garlic and cook for 1 minute.
  • Stir in chili powder, cumin, and oregano, then add tomato sauce and beef broth.
  • Return beef to the pot, bring to a simmer, cover, and cook on low for 2 hours until tender.

Flour Tortillas

  • Mix flour and salt in a bowl. Cut in shortening until mixture resembles coarse crumbs.
  • Gradually add warm water, mixing until a soft dough forms. Knead for 2-3 minutes until smooth.
  • Let dough rest for 30 minutes, then divide into 8 equal balls.
  • Roll each ball into a thin circle. Cook on a hot skillet for 30-60 seconds per side until lightly browned.

Notes

  • 1- Use cold ingredients for flakier biscuits.
  • 2- Taste the apple filling and adjust spices as needed.
  • 3- Serve warm with ice cream or whipped cream for an extra treat.
