2 cups
coconut milk
full-fat for best results
0.5 cup
sugar
adjust to taste
2 tbsp
cornstarch
mixed with 2 tbsp cold water
1 tsp
vanilla extract

Instructions
In a saucepan, combine coconut milk, sugar, and cornstarch mixed with cold water. Whisk until fully dissolved.
Cook over medium heat, stirring constantly, until the mixture thickens to a pudding-like consistency, about 5-10 minutes.
Remove from heat and stir in vanilla extract, if using.
Pour into serving dishes or a bowl. Let cool slightly, then chill in the refrigerator for at least 2 hours.
Notes
1- Use full-fat coconut milk for a richer flavor.
2- Adjust sugar to your preferred sweetness.
3- Serve chilled with toasted coconut or fresh fruit for extra flair.
