Ingredients
  

Cake Batter

  • 1.5 cups all-purpose flour
  • 0.75 cup granulated sugar
  • 0.5 tsp baking soda
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 1 tsp cinnamon
  • 0.25 cup melted butter
  • 0.5 cup sour cream full-fat recommended
  • 1 egg
  • 1 tsp vanilla extract optional

Crumb Topping

  • 0.5 cup brown sugar
  • 0.25 cup all-purpose flour
  • 2 tbsp shortening
  • 0.25 tsp baking soda
  • 0.25 cup hot coffee
  • 1 egg
  • 0.5 tsp vanilla extract

Instructions
 

Prepare the Batter

  • Preheat oven to 350°F (175°C) and grease a 9x9 inch pan.
  • In a large bowl, mix flour, granulated sugar, baking soda, baking powder, salt, and cinnamon.
  • Add melted butter, sour cream, egg, and vanilla extract; mix well with a mixer until combined.
  • Pour batter into the prepared pan.

Create the Crumb Topping

  • In a separate bowl, combine brown sugar, flour, and shortening until it forms coarse crumbs.
  • Set aside 1 cup of the crumb mixture.
  • In a small bowl, dissolve baking soda in hot coffee, then add to the remaining crumb mixture along with egg and vanilla; stir until just combined.
  • Sprinkle the crumb topping evenly over the batter.

Bake the Cake

  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool in the pan for 15-20 minutes before slicing and serving.

Notes

  • 1- Use cold ingredients for flakier biscuits.
  • 2- Taste the apple filling and adjust spices as needed.
  • 3- Serve warm with ice cream or whipped cream for an extra treat.
