Amazing Forgotten Chicken

Ingredients
  

  • 4 chicken breasts
  • 1 cup instant rice
  • 1 can cream of chicken soup
  • 1 packet onion soup mix
  • 1 tablespoon butter
  • 1 cup water

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Rub butter on the bottom of a 9x13 inch baking dish.
  • In a mixing bowl, combine instant rice, cream of chicken soup, and water. Stir until smooth and pour into the baking dish, spreading evenly.
  • Place chicken breasts on top of the rice mixture.
  • Sprinkle onion soup mix over the chicken.
  • Cover the dish tightly with foil and bake for 1 hour and 30 minutes, or until chicken reaches 165°F (74°C) and rice is tender.
  • Remove foil halfway through baking to brown the chicken slightly, if desired.
  • Let rest for a few minutes before serving.

Notes

  • 1- Use cold butter for richer rice flavor.
  • 2- Adjust liquid if it dries out; add a splash of water or broth.
  • 3- Serve with a fresh salad or steamed veggies for a complete meal.
