Air Fryer Eggplant Pizza

A fun and healthy low-carb, gluten-free alternative to traditional pizza, using eggplant slices as the base, cooked in an air fryer for a crispy texture.

Ingredients
  

Eggplant Base

  • 1 large eggplant Italian or globe variety, sliced into 1/4 to 1/2 inch rounds
  • 1 tsp salt for salting the eggplant slices

Sauce

  • 0.5 cup marinara sauce homemade or store-bought

Toppings

  • 1 cup mozzarella cheese shredded
  • 0.25 cup toppings pepperoni, mushrooms, bell peppers, etc., optional
  • 1 tsp Italian seasoning optional

Instructions
 

Prepare the Eggplant

  • Slice the eggplant into 1/4 to 1/2 inch thick rounds.
  • Sprinkle the slices with salt and let them sit for 15-20 minutes to draw out moisture and bitterness. Pat dry with paper towels.

Assemble the Pizzas

  • Spread a spoonful of marinara sauce evenly over each eggplant slice.
  • Sprinkle mozzarella cheese over the sauce, then add your desired toppings and a pinch of Italian seasoning.

Cook in Air Fryer

  • Preheat the air fryer to 375°F (190°C).
  • Place the topped eggplant slices in the air fryer basket in a single layer, working in batches if needed.
  • Air fry for 8-10 minutes, or until the cheese is melted and lightly golden brown.
  • Remove from the air fryer and let cool slightly before serving.

Notes

  • 1- Use cold ingredients for flakier biscuits.
  • 2- Taste the apple filling and adjust spices as needed.
  • 3- Serve warm with ice cream or whipped cream for an extra treat.
